The Wilderness is Calling...

 I have become slightly obsessed with the thought of backpacking. Not just for a weekend but through-hiking. I have never even been camping so I'm not sure why I am so drawn to the idea of hitting a trail for months at a time. The idea of the adventure and beauty nature has to offer consumes my thoughts. I read books about other hikers and watch documentaries of others having great adventures, so why not me? Why can't I be an other? There are so many breath-taking sites to see, thousands of miles to trek, I want to do that! 

The quote by John Muir "The mountains are calling and I must go." really resonates with me. I feel like something is calling me into the wilderness and I must answer the call. My husband and I decided to start training our bodies for a long through-hike. We will start with mini trips than slowly build out way towards hiking the Pacific Crest Trail (PCT). The PCT runs from the Mexico boarder to Canada. Can you imagine the scenery? Or the other hikers you will meet? I am not sure when the PCT will happen but I do know there will be hikes before it....

I am obsessed with the Tiny House movement! My husband and I are actually forming a plan so we can build on our own mobile tiny home. Take a look at these awesome "tiny houses"!

Is it Spring yet?

This past Summer my husband and I decided to try our hand at kayaking. We drove the 45 minutes to Grand Rapids, Ohio to the cutest kayak rental place, River Lures. The staff there were wonderful. If you live near or are ever in the area I highly recommend using their services. If you don't have the means to haul a kayak, they will shuttle you to and from your location of choice.

They set us up in a tandem kayak and we took off down the Maumee River. We fell in love instantly. It was the most relaxing adventure I have ever been on.  We came back from a full day of kayaking and knew we had found an amazing hobby.


  The next logical move was to purchase our own kayaks! Thanks to my mother-in-law who bought us each our own amazing kayaks for Christmas! He has the lime and mine is the lemon!
Now it is just a matter of "thinking Spring"!

Kale: The Queen of Greens!

The hardest part about clean eating is trying to find substitutes for some of your favorite foods! I love to snack on potato chips or tortilla chips! Those obviously are not very healthy choices so I replaced them with kale chips! Kale is one of the healthiest vegetables you can eat. Don't be scared to try something new! Here are a few benefits of kale:

1. Kale is low in calorie, high in fiber and has zero fat
2. Kale is high in iron
3. Kale is high in Vitamin K
4. Kale is filled with powerful antioxidants
5. Kale is a great anti-inflammatory food
6. Kale is great for cardiovascular support
7. Kale is high in Vitamin A
8. Kale is high in Vitamin C
9. Kale is high in calcium.
10. Kale is a great detox food

Here is my recipe for kale chips! 

  1. Preheat an oven to 350 degrees F (175 degrees C). Line a cookie sheet with parchment paper.
  2. With a knife or kitchen shears carefully remove the leaves from the thick stems and tear into bite size pieces. Wash and thoroughly dry kale with a salad spinner. Drizzle kale with olive oil and sprinkle with seasoning salt. 
  3. Bake until the edges brown but are not burnt, 10 to 15 minutes.

Clean Eating!

With it being the new year, everyone has made the resolution to lose weight and become healthier. Over the summer I had started eating only "clean" foods. I felt amazing and was finally seeing the results I was desperate for. Of course it lasted a couple a months before I started falling back into bad habits. A cheat day turned into a weekend which turned into a week and I was right back where I started.

Along with a couple family members we decided to try again this month. The New Year 30 day challenge. So far it has been amazing. We are eating lean meats, fruits, vegetables, and whole grains. I have been very careful about eating anything processed. Of course no one can be 100% but we can do our very best!

The first couple days of detoxing were hard but now I feel amazing. Instead of the gallon of pop I was drinking, I am drinking a gallon of water! I finally have energy without a horrible afternoon crash! With moderate exercise, I am hoping to be at my goal weight by May!! I'll be sure to keep you posted on my progress! If you get the urge to join in our challenge, I will be posting recipes. It is pretty basic, "If God didn't make it, don't eat it!"

Happy New Year!

 I have returned from my year long hiatus!! We had so much change happening all at once that I decided to take some time off. What better time to come back into the blogosphere than the beginning of a new year!

I hope you all had a great holiday season! Last year, we left Bowling Green and moved to Ottawa where my parents had relocated. My mom is the Executive Director of an assisted living facility and I am the Activities Director. Let me just say, there is no better job! I have been doing the activities for a year now and absolutely love it. It is a big change from a bar manager!

After getting settled into a new town and job, our 7 year old Bullmastiff, Rambo, begin experiencing sever health problems. After exhausting all treatment options, we had to make the heart wrenching decision to lay him to rest. We were absolutely devastated but knew we did the right thing.

About a week into our grieving process, we noticed our 3 year old English Bulldog having so right eye discomfort. Several very expensive trips to the vet and a month of medications, Krush had to have her right eye removed. We get her home and 4 days later her stitches came out and she had to undergo a second surgery to restitch the eye! After laser therapy and wearing a cone for a month, she is doing fantastic!

Although it has been a rough few months, we are happy and healthy and are excited to see what 2015 has in store!!
